Sweet Potatoes Stuffed with Cabbage

After a week of juicing, I was ready to return today to my usual plant based way of eating. I had my customary morning fare that included celery juice and a breakfast smoothie. As lunch time approached, I prepared to break my liquid fast.

I was going to eat a fruit salad. However my on hand supply of fruit was low. Taking stock of what I had available, I chose to try a simple recipe from Anthony William’s book, Life Changing Foods, that featured sweet potatoes.

I was eating lunch alone so I adapted the recipe by cutting the ingredients down. I used one sweet potato, 1/4 onion and 1/4 of a red cabbage. I made the sauce as directed.

With the smaller amounts, I simply stir fried the cabbage along with the onion and garlic, rather than braising. The red cabbage made a gorgeous stir fry!

When the sweet potato was done, I prepared the sauce while keeping the stir fry warm on the stove. I was out of lemons so I substituted a lime. The sauce was wonderful…sweet without using honey, and a bit tangy from the citrus and ginger. I garnished my meal with fresh parsley.

The sweet potato is a powerful food. It promotes productive bacteria in the stomach and gut while starving out unproductive bacteria and fungus. Sweet potatoes enhance the body’s production of B12. Rich in vitamins and minerals, this superfood helps alleviate narrowing of the intestinal tract due to chronic inflammation. In addition, sweet potatoes help protect against a multitude of cancers.

This colorful meal felt celebratory, and indeed it was, making it an excellent first meal after a week of drinking my nutrition. It was so delicious. I ate slowly, savoring each bite, and enjoying the combination of flavors.

Raw Wild Blueberry Pie

This is a great plant based recipe, sugar and gluten free, with no baking required. I’ve wanted to sample this delicious looking pie since seeing it in my Life Changing Foods book by Anthony William.

Wild blueberries are the super food, among super foods. Anthony calls them the world’s most powerful food. They are extremely high in antioxidants, making them effective in preventing and fighting against all diseases, including cancer. Wild blueberries eliminate heavy metals from the body, restore the liver, nourish the brain and they are the most potent prebiotic in existence.

While domesticated blueberries have health benefits too, it’s the wild berries that are most powerful. Buy them frozen at the grocery store, making sure the package has wild blueberries printed on it.

1/3 cup cashews

1/3 cup unsweetened shredded coconut

4 cups pitted dates

20 oz frozen wild blueberries, thawed

1 mango, sliced or 2 cups frozen mango chunks, thawed

For the crust: process cashews, coconut, and 3 cups of dates in food processor until thoroughly combined. Press crust into 9 inch pie dish. Cover and refrigerate while preparing filling.

For the filling: process half the wild blueberries, 1 cup of dates and mango chunks until well blended. Add remaining blueberries. Pour into crust. Allow to set in refrigerator, 40-60 minutes.

I garnished the pie with additional wild blueberries, covered with plastic wrap and placed in the refrigerator.

After a healthy dinner, a slice of this easy to make pie was my special treat. And what a treat it was! Light, fruity and so satisfying, I enjoyed my piece of pie even more, knowing I was receiving health benefits with each delicious bite.

I will be making this pie for special occasions and as a dessert for company. And sometimes, I’ll create one for me, as a celebration of my healthy lifestyle.

Health Benefits of Celery Juice

One of the first shifts I made in my health routine was the inclusion of freshly prepared celery juice in the mornings. One year ago this month, after reading a post by the Medical Medium, Anthony William, I hauled out my juicer and ran a bunch of celery through it (literally one bunch of the green stalks, also called a head of celery), eager to try out this amazing juice.

According to the book, Life Changing Foods, by Anthony William, celery is one of the most powerful anti-inflammatory foods because it starves unproductive bacteria, yeast, mold, fungus and viruses that are present in the body, and flushes their toxins and debris out of the liver and intestinal tract. 

These pathogens are the underlying cause of inflammation in the body. Without the pathogens, the body is better able to handle the other stresses life often presents. Celery also helps good bacteria to thrive and alkalizes the gut. At the same time, celery raises hydrochloric acid in the stomach so that food digests easier and doesn’t putrefy. This prevents a multitude of gastrointestinal disorders and allows for restoration of the entire digestive system.

And it couldn’t be easier to prepare. Wash one bunch of celery, trim the base from the stalks, and run through a juicer. One bunch makes about 20 ounces of juice. I like the taste of celery. The juice is light and refreshing to me. Anthony suggests running half an apple through the juicer, along with the celery stalks, if you don’t care for the taste of celery. And then gradually use less and less apple, to gain the most benefits from the celery. 

Drink celery juice on an empty stomach to raise hydrochloric acid levels. I start the day with a mug of warm lemon water and then follow it with celery juice. A breakfast smoothie follows later in the morning. 

I love how my body responds to drinking celery juice. I feel better. My energy vibrations begin rising while I am making the juice. It’s that powerful. Unfortunately, when I have a busy day ahead, it is the part of my morning routine that I am most likely to skip. No more. Even if this post doesn’t encourage anyone else to improve his or her health through drinking celery juice, it reminds me of what I am missing if I don’t. 

Greater health is worth the few extra minutes that it takes to make fresh celery juice every morning. I am worth it…and so are you. So….Cheers! Here’s to our health, wellness and vitality.

The 28 Day Healing Cleanse

Today’s post highlights how my healing journey began, in July of 2016, and explains the 28 Day Healing Cleanse that so radically altered my health and my life.

I love how life flows and the Divine guides me to the right actions to take. I came across Anthony William on Facebook a couple of years ago. I’ve benefitted from his posts concerning health, taking note especially of his insights on healing from what he calls mysterious illnesses, including chronic pain and inflammation. 

It was no coincidence that I was aware of Anthony at a time in which physical issues from a long ago car accident worsened. After the accident in 1995, doctors said that in 20 years my condition would rapidly deteriorate. I  didn’t want to believe that. And yet in the fall of 2015, right on cue it seemed, I began using a cane to walk. After six months of increased pain, physical therapy, massage and energy work from my friend Margit helped me to walk without aid again, most of the time. However, I was concerned, especially when my right leg began to worsen as well. I searched for ways to bring further healing to my damaged back and legs. 
The 28 Day Healing Cleanse

Which brought me back to Anthony William. I saw his post about drinking celery juice first thing every morning, to restore digestive health and bring balance and healing into my body in numerous ways. I have been amazed at what this daily practice has shifted in my overall well being. 

Encouraged to know more and go further, I bought Anthony’s book, Medical Medium. I finished the book, eager to begin the 28 day healing cleanse, as described within. I made careful notes, about what I could eat and when, and what herbs and supplements to include. 

It was very simple, really. For the next 28 days, I only ate fresh fruits, dates and raw vegetables…green vegetables primarily. I eliminated meat, sugar, gluten, dairy products, eggs, soy and corn. Using a juicer and a blender, I enjoyed celery juice in the mornings, plus fruit and veggie smoothies, and chopped salads throughout the day. No, it wasn’t how I normally ate. And that was the problem. My body needed a break from its usual fare so that toxins and heavy metals could be released, and health restored.

I was excited. I was hopeful. I became dedicated to creating the best possible version of myself, which included being healthy, active and pain free. 

The first three days on the cleanse, I was a little low energy, as my body began to release toxins, and I had a headache. However, by day four, my energy came up, the headache was gone, and amazing changes were occurring. By the end of the first week, my mobility had increased and my pain decreased to the point that I parked my cane in a corner of the bedroom and have not used it since.

Anthony William says, “We eat things our systems don’t appreciate, indulge in foods to comfort our emotions rather than feed our bodies and souls. As we seek out snacks, meals, beverages and desserts that keep emotions at bay, our bodies become the victims of our soul damage. For the first time in my life, I listened to what my body needed, and to the guidance I was given, at a soul level. I am not sorry. The 28 Day Healing Cleanse began my healing process, allowed me to take back control of my health and changed the quality of my life.
